For some reason, it seems that Valley when windowed doesn't scale well with my SLI setup.

With lower resolutions it puts less stress on the GPU. I would bet if you open up HW Monitor and watch your CPU core, and GPUz to watch the GPU usage, you'd see the GPU usage drop, as one or two of your cores maxed out. It happens when you remove AA as well.
