Any Way to Stop Update Automatic Restarts?

    When you click on "Update Windows Now" in the lower right... it checks for updates and lists all that are available, with check boxes to install or not install them.
    IMO, it's much simpler and totally manual, so you can do your updates when YOU want to do them.
    I totally agree with @Ghot, that is what I use.

    It is so much easier to deal with WU's directly than have to go back and uninstall a WU or use System Restore or a previous System Image.

    Please see:

    Note carefully how the handling of update-related restarts changes with builds.
    Starting with 19H1, when your device has an update requiring reboot (including new builds released) you will see Windows Update icon with orange indicator in the notification area (system tray) alerting you to restart your device.

    Starting with Windows 10 build 18298 (19H1), when your device has an update requiring a reboot (including new builds released), you will see the Power button in the Start menu with orange indicator alerting you to restart your device.
    and consider using Active Hours:
    Change Active Hours for Windows Update in Windows 10


    More: you have Pro, so set updates to Notify using Group Policy.

    That way no update is even downloaded unless you approve it.
