Currently Win10 Pro Ver 1909. (18636.836) running .
At this point i have all updates blocked until i am satisfied of major bugs rectified .
My question is ,if all updates are blocked or held until some date in future (ie 35days) will i still be able to sepperately download and install security patches only for Defender .
You don't really need to block updates, the May 2020 Feature update is entirely optional and shouldn't install until you click its 'download and install' link.
If you pause updates it will pause all Quality (cumulative) and Feature (2004) updates until the pause expires. Defender definitions are not affected by the pause.
But as you have Pro a better plan would be to defer just the Feature Updates for 365 days. Then you can un-pause updates, allowing cumulative updates to be delivered as normal. if/when you are ready for 2004 you can remove the deferral.
