My 2 cents, if I may:
I've had success in a similar situation; unplug the desired hard drive sata plug, boot the dvd, at choose location carefully plug the sata connector back in and click 'Refresh'.

It may be due to the storage controller mode set in the BIOS, or may be some sort of system incompatibility.

So....i watched the video that Arc posted, managed to locate a driver for my Dell Optiplex 760 on the Dell support website - i tried a test by booting from the Win10 DVD, as i downloaded the driver from Dell on my USB stick.
When the Win10 installer showed no drive, i clicked 'Load Driver', clicked 'browse' to locate the folder on my USB stick with the downloaded drivers in, and it found the driver, it installed that - and my hard drive then appeared on the 'Where do you want to install Windows' screen, which it hadn't before. Excellent.
If anyone happens to read this one day with the same issue/Pc, this was a fix to install Windows 10 Pro 64-bit using a DVD burnt from an ISO downloaded from the Microsoft website - and installed on my Dell Optiplex 760 with 4GB RAM, an Intel Core 2 Duo processor, Dell motherboard - and the full hard drive details are a 250 GB "WDC WD2500AVVS-62L2B0 ATA Device".
And the magic driver that was able to make the Win10 installer see that hard drive was the file "iaAHCI.inf" which was from the following driver download:

I will do a back up/image of my Win7 system again, and try actually going through with the Win10 installation - and then see how that goes...!
