I'm asking since for Christmas I have gotten a 1tb external SSD and I can update from 1809 to 1909 while making an image on Macrium. I ask for upgrading since I'm wondering if it's stable enough now or are there still lots of issues with 1909?

Don't get caught up in articles like those from Forbes who likes to create sensationalist articles claiming Windows updates are world ending. While updates can create issues - it's not always the fault of the update but can stem form incompatibilities with older software, hardware or user system "tweaks", and yes, at times, the update itself. However, very rarely are the updates so messed up that they causes major issues worldwide.
That said, the 1909 update is, in my opinion, the least issue plagued update Microsoft has released to date. My opinion is you really should move on from 1809 to 1909 since 1809 is nearing EOL anyway.

I've only installed or updated too 1909 on one machine so far
It was updated from win-7 home premium
It went amazingly well had some sfc errors after setting up everything personal preferences changing antivirus programs/...
sfc was pretty easy to fix
It was actually scannow that found and fixed the errorsCode:1) sfc /verifyonly 2) dism /online /cleanup-image /scanhealth 3) dism /online /cleanup-image /restorehealth 4) sfc /scannow
The greatest issue with 1909 is the significantly messed up change to file explorer search- widely commented on e.g.

If you want the 'best' build- at present, as per that MS article, upgrade to 1903.
Older iso's are available using the
Heidoc iso downloader
MS is said to be fixing the problem. Well, we'll see.

So I think I'm about ready to do this since I may have some time soon, but I looked to my windows files and found the Windows BT file that has the 1903 instillation with a setup.exe. Can I update to 1903 from here once I do my Macrium Image? Also can I use the external SSD for anything else or do I have to use it only for imaging.
You can use the external disk for anything you like, including being a paperweight...
If you wish to upgrade to 1903, first make sure you have a Windows disk image, just in case.
You can get a 1903 iso file by using
Heidoc iso downloader (free)
- just search for it.
Then rt click the iso, mount it, run setup.exe from the new drive letter created.
