I think you have a different model?
I have the exact same model as the OP (8600 AIO Premium), have had it installed on 3 different systems now (both Win7 and Win10) and NEVER saw the "scanner" listed separately in the Windows Control Panel. But it has always worked just fine, including the scanner.
Having said that, I am on a Dell PC.

OTOH, if it's working OK, then it may be much ado about nothing.
