Alright, after some experimenting, I've gotten further:
How do I format this dynamic disk? (or get rid of this parition)-disks4.png
    C:\Windows\system32>reagentc /disable
    REAGENTC.EXE: Operation Successful.

    C:\Windows\system32>reagentc /setreimage /path W:\Recovery\WindowsRE
REAGENTC.EXE: The specified path was not found.

    C:\Windows\system32>reagentc /enable
    REAGENTC.EXE: Operation Successful.

    C:\Windows\system32>reagentc /info
Windows Recovery Environment (Windows RE) and system reset configuration
    Information:

    Windows RE status: Enabled
    Windows RE location: \\?\GLOBALROOT\device\harddisk0\partition3\Recovery\WindowsRE
Boot Configuration Data (BCD) identifier: fbf645ec-a464-11ed-8df7-d23745fd74c2
    Recovery image location:
    Recovery image index: 0
    Custom image location:
    Custom image index: 0

    REAGENTC.EXE: Operation Successful.

    I can see a Recovery\WindowsRE fodler, so I'll assume it's all fine.

Assign a letter to the Recovery partition

Is there a X:\Recovery\WindowsRE\Winre.wim ? (replace x with the recovery partition letter)

How to fix The Windows RE image was not found (Winre.wim install.wim install.esd)

Despite not being able to access the folder in file explorer due to denied access and dir not doing much, I did manage to cd into the WindowsRE folder and "run" winre.wim, which just asked how I want to open it. So it should be there.

To test if it is function, launch the WinRe on startup
Boot to Advanced Startup Options in Windows 10

I can confirm the recovery works.

Not format. You have to clean all partitions.

Open a CMD window as administrator and type:

    diskpart
list disk (it will list all drives. Identify the drive number)
select disk n (replace n by the drive number obtained with list disk)
    clean
    convert GPT
    create part primary
    select part 1
    format fs=NTFS quick
    assign
    exit (to exit diskpart)

Thank you so much! I've got the drive back after doing a sweep through of everything and copying things I need. You've been a huge help!
