I case you don't know this, I want to tell you the Mail App problem is widespread. I am giving you a link to ANSWERED Mail App problems. These are from the Microsoft Community Forum. Only 80 Mail App threads have been answered. If you check the boxes with the RED ARROWS (then click APPLY) after clicking on my link, you will see that 880 threads have been started pretty much since 7/29/2015. Lots of the threads have several participants.
I thought the 80 that have been marked ANSWERED might provide you with useful info.

WoW never knew that many folks were having that much trouble with Mail !!! Holy **it Glad I don't use it even more now. Tried it for about 3 days, and hated it almost right away. I use either outlook on the web or Outlook in my Office 13. Both are pretty much the same. When my mail notifier tells me I got new mail, all I have to do is click on its icon and I am on outlook.com reading my mail in about 2 sec's :)
Was still thinking about hotripper His only fix just might be to reset his windows 10. should make a backup of anything he might want just to be safe. After a Windows 10 reset his Mail program should be their and working.
That might help with "Show Notifications from these Apps" displaying the Mail Icon.
But I tried a CLEAN INSTALL of WINDOWS 10, my Action Center, Sounds, Banners and Live Tile were good for less than a week.
I have an external hard drive so I have all my software setups, photos and documents copied on it. Considering doing another CLEAN INSTALL but I'm riding the waiting on an update cure for a while.
WARNING : Doing a Clean Install removed my "Return to Windows 8.1 Button".
I have a Windows 8.1 Recovery USB and my Windows 8.1 key, so losing that button did not bother me.
Doing a RESET might remove the RETURN to WIN 8.1 Button also.
Yep ahead of you. Did a clean install. I have two hard drives one with windows install and the other for data. So Im good for backups but resetting the settings is annoying.
So the fresh install didn't help. And I did realize that the apps wont appear in the Show Notifications area until a notification is pushed. So I get other notifications which means the problem is with the mail app. And after all this, it seems it is just garbage until a fix is released. Waiting is fine, I hear the notifications from my phone anyway.
