I had it set to do the restart and update at 11PM, since I'm not on the computer at night and I usually have it shut down by then. Well, this morning when I started up my computer, I had a message that they were about to restart and finish the update at 8:59AM, or I could reset for another time or restart now. I had some things to do on my computer, so I set it up for 11PM again. Does this update take that long to load, I find that hard to believe, or maybe the fact that my computer was shut down for the night? I didn't think that would interfere with a windows update, was I wrong? If so, I'll leave it on tonight.

If you shut off your computer nothing happens. Now I was corrected on this in that some BIOS's provide for power on. That said, normally when it is off, not asleep or hibernating, it is full stop.

Yes this is a big update. If I were you I would force the restart as soon as you are finished using.

Thanks Ken, I'll leave it on tonight and begin the restart for upload before I leave the room.

I forced the restart around 10PM last night when I got off the computer for the day, this morning the new update was downloaded to my computer, and so far so good. I went to look at my update history to see that it was listed as the newest update, but all the old updates seemed to be gone. Thanks to everyone here for your advice and input.

Great. Just to confirm you are on Creators

Windows + R, type winver, enter. Should be 1703.

The old updates are gone because they are updates to your older version. The new version includes most (if not all) of those updates. There is no reason to retain them because they do not apply to the new build.
