    Here is half a fix

Well... slowly but surely... it looks like it is two separate issues. The grayed-out "Give me updates for other Microsoft products when I update Windows" can be corrected by going in to GPEdit, Computer Configuration=>Administrative Templates=>Windows Components=>Windows Update. "Enable" Configure Automatic Updates and check "Install Updates for other Microsoft Products". Check for Updates then reverse the process and set it back to "Not Configured". Then run another Windows Update. At that point the grayed-out option is selectable and un-selectable. Go figure.

Still haven't it a sure fire fix for the red warning "*Some settings are hidden or managed by your organization" but baby steps.... will call Microsoft if I can't figure that one out. They have to be releated somehow....

I'm having the same issue though, the system came with 10 home x64 as it's initial OS. This also happened on my notebook which has been upgraded and has 10 pro x64 but, everything's fine on my bedroom system that's a refurb with 10 pro x64. All are activated btw. I'd hoped that some of the post-release updates after Creator's was installed would've amended the issue but, not yet on mine. And, being a person who likes to customize my os to suit, it's pretty frustrating. ..will keep diggin' but, if someone's got this buggered out already, drop me a note, please. Have a bit of a migraine going and probably miss bits here.n.there. Thanks for everyone's input & expertise btw. It's nice to see actual thought working somewhere (if you know what I mean). ;-) ~Myr

One thing that apparently causes it, is when people go out of their way to block telemetry. "Microsoft is spying on me" etc. They kill services and do other unorthodox things to stop info from going to Microsoft. And cripple their system in the process. I had my issue with a stock, clean install, with all the defaults selected during the OOBE. There are at least two different instances of this. Most of those with this issue on Home and Pro, see that message on different Settings pages than I do in Education. Same message just in different places and with different settings locked out from what I see. I'm currently not running the Education version anymore. I'm debating installing it on my spare desktop PC and revisiting this issue. It's a painful process though. Edit group policies, reboot, and check if it worked. Then go back and undo what you changed and try another. Wash rinse repeat.

EDIT: I have never had this issue on any Home or Pro installs. For me it only happens on the Education version.

Just did an in place upgrade from Pro to Education via change product key. All the same settings I mentioned here, *Some settings are hidden or managed by your company are locked out etc. Laying back and relaxing today, but I will try a few things Monday and post back.

Went to Settings > Privacy > Feedback & diagnostics and noticed that neither Basic or Full was selected? One would think one or the other should have been set? Selected Full and rebooted but it didn't help. Nothing being selected may be a side effect of what ever the actual issue is though. Still working on it.

Let Microsoft provide more tailored experiences with relevant tips..... Was on though.
