Looks like AutoUpdate installed Office 2007 with the May 10 updates

My computer had Office 365 installed, plus Visio 2016. Update history shows a whole bunch of Office 2007 updates on May 10. Control Panel - Programs and Features shows Office 2007 installed on May 10. I didn't do it. Word 2007 is now the default and converts files to its format when opening them.

Why did this happen? And can I safely uninstall Office 2007? Are there any potential pitfalls?

Computer: Dell Precision M4800 laptop, 16GB memory, 500GB hard drive, 286GB free
    OS: Win10

Your computer 'had' or 'has' Office 365? You should be able to uninstall Office 2007 in Control Panel, Programs and Features but may continue to get updates if any part is left-over such as PowerPoint Viewer. While in Control Panel you can use Default Programs to make changes as to the programs that can open files.
