It has all changed now - feature updates are optional, security ones are still mandatory. You are only required to update after 18 months.

It is very rare these days that updates are withdrawn as they are tested a couple of weeks earlier in the Release Preview Ring.

In any case, Windows 10 only gets security updates anyway now. It only has a couple of years left before it is EOL.

As you have Pro, you can use the Group Policy Editor to set updates to 'Notify'.

That way you - yes- are notified of available updates- which are only applied when you accept them.

That way you never get an unexpected restart (also see Active Hours).

I also choose to not allow Preview updates- again using Group Policy.

Unclear.

If by 'software updates' you mean updates to programs you choose to install...
- there are two basic types.

a. apps installed from the Store- which have their own update schedule

b. any programs you've downloaded and installed.

If you have Pro - the best and simplest way is to use Group Policy.
