Will a system restore undo all updates?

Well, I guess if worse comes to worst, you could always clone, back to the original drive.
But just imaging your Windows installation is a lot easier.

Put it this way, if System Restore and restoring a SR point is working for you, then yes, a successful use of System Restore will revert an update if a restore point created before applying that update is used.

The above responses about using disk imaging will be given on the basis of SR restoration sometimes, for a few people, not succeeding.

Also bear in mind many updates can be uninstalled.

The downside of using disk imaging to revert an update is that EVERYTHING including user data on the partition restored reverts to as it was at the date the image was created.

System Restore doesn't affect user files (unless you write certain types of scripts, as these are also monitored by System Restore).

As for optional updates- it's unlikely you'll notice any practical benefit. If your PC is working well now.. the less intervention, the better.
