Microsoft actually say the system requirements are: "Windows 10 version 18362.0 or higher", so yes, you'll need to upgrade.

You should have been automatically offered the Feature Update to a newer version in Windows Update. Have you done anything to deliberately block updates?

Microsoft release a Feature Update to the next version of Windows 10 roughly twice a year. Each has a 4 character name, the first two being the year and the last two indicating which half of the year it was released. Currently the latest version is 20H2 (build 19042). Previously MS had used the month of release as the last two characters, but changed the naming convention after version 2004 (build 19041). Each version is supported for 18 month from release. Build 18362 was version 1903, that reached end of support on 8th Dec. 2020.

For Flight Simulator 2020 you need build 18362 or higher, the current 20H2 should fit the bill. You can upgrade to the latest version using the Media Creation Tool, either with step 4 or (my preferred method) using the MCT to make the ISO and use that to upgrade, Step 5 in this tutorial.

Upgrade to Windows 10

*** I note you have Win 10 Pro.
A very useful way built in to Windows 10 Pro is to set updates to 'Notify' in group policy using.. yes.. the Group Policy Editor.

This means you are notified of an update, which will not then be applied unless you choose to accept it.

This is fine until end of service life for that build, when MS may override that setting.

Otherwise:
This question repeatedly occurs- if you care to search tenforums you will find many threads referring to free 3rd party tools used to control updates which have been around for several years, for example.

And even a simple Google search for e.g.
"How do I stop Windows 10 updates"
should yield useful results.

These utilities then provide ways to scan for updates so you can view them and make a decision. I.e. they do more than simply stopping WU.

As Matthew Wai says, the automatic cumulative updates do change the build number, but only the minor number (the number after the '.'). Your 14393.2214 for example is major build 14393, minor build (ie its latest cumulative update) .2214. That was in fact the last CU that build 14393 received before end of support.

The only way to change the major build number, as you need to do in order to run that Flight Sim 2020, is to upgrade to a newer version of Win10.
