A disk image is an exact copy (image) of your entire drive.

The advantage is that if you need to restore, all of your custom settings, shortcuts, files, apps, and Windows are restored exactly as they were when you made the image.

However, you probably have files that change between images (many of us do), you would also back those up as well, to limit the data loss if you need to restore,

A "regular backup" can have different meanings (just personal files and apps, just Windows, etc.)

You have to decide what is important, and how you can best protect yourself if something goes wrong (i.e. ransomware, hard drive failure, bad update, etc.)

When did you install it? And how long did it take one each computer?
I have never trusted Windows Update to upgrade my computers to the next major. So I upgraded to 2004 about 2 weeks before it was first offered on Windows update and took no more than 30 minutes on each computer. After each upgrade, I run:
    dism /online /cleanup-image /startcomponentcleanup /resetbase

I think that helps keep things running smoothly.
