I expanded the partition to take up all unallocated space but still get the error.

    When you do what?

    Repair install or Windows Update?

If it's Windows Update, run the script that @Caledon Ken suggested in post #12

Oh, I think I must be going blind because I only remember seeing the first line of your reply haha.

I would leave Disk 1 as is, and give Disk 0 more allocated space.
I'll give it all another shot when I come back from vacation.

    Alright, I'm back.
I redid some stuff as I can't exactly remember where I left off last time.

The C partition now has 105GB free.

    sfc /scannow
Can't remember the exact output it gave but it said that issues were found and that they were resolved.

    Dism /Online /Cleanup-Image /RestoreHealth /Source:wim:E:\sources\install.wim:4
    The restore operation completed successfully

I also ran the reset script again.

The Windows Update menu changed. It no longer gives an error code on pressing retry and it looks as if it's successful. However on restarting it says that updates could not be completed and reverts the changes. It then proceeds to do the fun bootloopy thing I mentioned in my first post.

Running setup.exe from the ISO still gives "Sorry, we're having trouble determining if your PC can run Windows 10. Please close the Setup and try again"

Got me beat. At this point I would clean install (not a fix but fatsest way to resolution) but I'm not sure on the activation being the education edition.

Can your friend legally activate it again if that is the route you are forced to take. (at some point)

Oh well. I was starting to think about doing a clean install anyway to just get it over with.
If I do have problems with the activation, I still have some spare keys that aren't for the educational edition.
    Thanks for all the help.

I believe that's what I ended up having to do as well.
Also, the key you're using now should still work after a clean install. Just don't enter a key during the install.

In case you prefer to clean install > plan to re-install drivers and applications
    Clean Install Windows 10

There are also options to have Windows maintain files and install a fresh copy of Windows (drivers and applications need to be reinstalled)
