Use wushowhide.diagcab to hide any update you don't wont to install.

How do you do that? I don't know a way to do that presently with one simple setting, but here's the change that's coming in 20H1 (apparently):

If they can be found by Windows Update MiniTool, use the tool to hide them.
If they cannot be found by the tool, you don't have to do anything, as they will not be installed automatically.

Optional updates in Windows 10 serve a quite different purpose from those in Windows 7. for W7 they were an (ever growing) list of patches that you may (or may not) need. Sooner or later you had to hide some of them just to be able to make sense of the apparently never-ending list.
In Windows 10 there will only ever be one optional Quality Update. That's because they are a cumulative updates, including all patches and security fixes from previous CUs. Each Patch Tuesday (2nd Tuesday of the month) a non-optional CU is issued that has the latest patches and security fixes. Any CU issued in the next week will only have new non-security fixes, which is why it is marked as optional. Should another optional CU be issued the week after that it supersedes the previous one, meaning only one optional update will be offered - the latest one.
These optional CUs contain previews of the patches to be included in the next month's Patch Tuesday CU release. Once the Patch Tuesday CU is released it supersedes any previous CU (be that optional or otherwise) and you will never see the previous CUs offered again.
