Hi, as you have Pro, there is actually no need to be not in control of Windows updates to a significant degree.
Using the Group Policy Editor you can
- set Windows updates to Notify you so you get an Action Centre notification, then see what updates there are available, then approve their download (or not)
- defer feature upgrades for up to 365 days
- have control of when restarts occur using Active Hours and group policy.

Note: WinAero's free tweaker also allow you to set updates to Notify.

And yes, it's frustrating that these options aren't exposed in a more obvious manner, and that the default gives the worst user experience (in my opinion, FWIW).
