I did as well Jeff but I got an email from Gabe Aul that said we can still install the insider hub, but I think he has been in the mushrooms again as it will not install.

I'd be careful, you can't "legally" disable the updates... if you do, MS says you will get cut off from security updates completely.
It's also been out since 2009... of course, it's bound to be more stable, reliable, etc. but when Windows 7 came out, it was just as sketchy, because it wasn't run on every computer system up to that point. I still had a bug in Windows 7 that cropped up now and again.
Really, Microsoft have now allowed users to choose which updates they want to install? That sounds to me like a positive turn of events.
I voted "I'm going to stay an Insider" but actually I am going to do both, like I have it right now: dual boot, on one SSD Win 10 Home with "Get insider builds" disabled and always using a local account - this is my main OS- and on the other SSD Win 10 Home set to "Get Insider builds" from the Fast ring and always logged in with my MS insider account.
As to my primary system it will remain as an upgrade, albeit my secondary will remain as an Insider system as my iMac will stay with Windows 7 in Boot Camp. . .The best of all possible worlds. . .:)
According to Ed Bott, the fact remains that if I hide an update, it will not install on my machine.

There is no comparison between the Insider version of W10 and the fully released to the public version.
Everything appears to work on the release version whereas for example desktop apps along with other many other features do not work on the Insider version.
Obviously M$ does not want pirated versions to take full advantage of all its applications.
