Where does the "Need to stop getting insider builds completely?" link in the screen shot take you? I don't have easy access to mine at the moment or I'd look for myself.
When I click the link, it takes me to the Microsoft Website, which explains that I need to wait for the next official build to be released before stopping the previews.

Your screenshot is from a much older build and isn't relevant any more.

This screebshot is old. The current link just takes you to a not-so-helpful Microsoft help page.

If you have a recent non-watermark version (14383), then you do not get diverted and can leave. I did it on my tablet at 14388 and left program.

If you do this, you will not get updates (maybe for 14393 though?). You would need to manually upgrade to release version.

My screen shot was from the most current build released at the time I posted it.
