I've Windows 10 Insider Preview 14279 but it has several bugs that affects me.
I'd would like to remove it.
I've tried to install Windows 10 (the regular version) but it doesn't offer me the option to keep all my apps and personal settings.
How can I force it to keep everything and just upgrade?
Both are the Professional and x64 version.
I don't have the backup folder anymore.

You can't.
To opt out of Insider Preview, you will need to do a Clean Install.
Clean Install does not allow keeping files, nor settings, nor apps.
Backup the files you want to keep first.
You will have to reinstall all your 3rd party programs after clean install.
When the next release version comes out, you would be able to exit keeping all programs but you cannot go backwards. I am guessing next release will be around April/May but no actual knowledge of this.
There is a file in the Windows 10 installation media called cversion.ini. Not exactly sure in what folder it is located in - just search for it, probably in sources. Save a copy of the file as cversion.bak. Edit cversion.ini and change the two version numbers listed in the file to the exact version number you currently have installed now (found by running winver). Then try the upgrade install of the older Windows 10 non-insider version.

And winver provides these data
What is the number I need to modify?
My thought is that one can't replace numbers to make the Test/Insider/Preview/BETA the same as the RTM/Released version but would have to install the RTM version which probably will function as a clean install, wiping existing data out in the process. At least that's what I ran into with previous test/BETA versions, haven't tried getting Win10 RTM except as the free Upgrade over Win7 w/SP1 and Win8.1. After about July 28 I'll probably have to buy a copy of Win10 for an additional computer or maybe time for a new computer.
What O/S was on your computer before joining Insider? was it W10 or a qualifying W7/8.1.
Do you have a Microsoft Account and is it synchronised to OneDrive....IF YES
Download an W10 ISA....when you install it will give you the option to save your files and folders
Was Windows 10 Pro, regular version, I don't remember the build.
And not, my Microsoft account is not synchronized to OneDrive.
