I have a question if i install windows 11 25375 on a real pc which channel should I setup the windows insider program to in order to keep updating without reinstall later on?

Build 25375 is a release in the Canary Channel.

It is not recommended to use Canary as your main OS.

Canary is often referred to as Hotel California - you can never leave (only clean install).

Best option is to install it in a virtual hard drive natively booted as dual boot alongside main OS.
