You can go back to your post and edit it. Links are put in URL tags (syntax:[URL="Link"]Any text[/URL] ):

No problems, I explained it really badly.

Ah OK, you have WYSIWYG Mode enabled by default. Switch to SOURCE Mode editor, then you'll see it :)
Like me:
I live in Ireland, Cortana says it not available in because they don't have Cortana in the Gaelic.
However the main Language is UK English, so I jus choose UK English & everything is OK!

Looks like after going to the link, and MS verifies you are an Insider, it checks your current install version. It then sub-sets the choices accordingly. To get the other flavors (Education, Enterprise, etc.), you need to click Advanced options and you'll get the list you posted. Just a note to avoid any confusion. TC
