I unpin all the tiles from my Windows 10 Start Menu. It's a shame, but they can't all be unpinned at once. However, once I have all the tiles unpinned, I have a nice listing of my apps on the left side.
Once the Start Menu is closed and reopened, it will be resized to show the listing.
I'm afraid we may, Clint, since Internet Explorer is scheduled to be deprecated sometime in the future, along with the Control Panel. As you know, setting up Quick Launch requires us to go to IE to select Quick Launch.
Edit: Oops, I kinda misread your question, Clint.
I use the Windows 10 GUI/Start Menu (with tiles removed) and set up Quick Launch as necessary when I do a clean install. So far, we can still access the Quick Launch path:
Local Disk C>Users>Your 5 character ID>AppData>Roaming>Microsoft>Internet Explorer>select Quick Launch and go from there.
@Clintlgm, @Wynona:
Quick Launch is not going anywhere. It's still there, and it has nothing to do with existence or possible retirement of Internet Explorer. There is absolutely nothing forcing user to select and use the default Quick Launch folder, stored in %appdata%\Microsoft\Internet Explorer as Wynona told.
For instance in my case, I use Quick Launch toolbar with its folder stored on my OneDrive. This way I have the same Quick Launch toolbar with my preferred shortcuts set up on all machines fast and easy after for instance a clean install.
Because I use OneDrive Files on Demand (loving it!), I just need to remember on all machines to always select my Quick Launch folder and select Always keep on this machine. If forgetting that, the Quick Launch would only show blank placeholders because files (shortcuts) would not be saved on local machine:
Short: Quick Launch works perfectly. It is not going to be deprecated, and it has nothing to do with IE.

Although I use and will miss CS. My primary means of accessing programs is Free Launch Bar which is an expansion of Quick Launch. I have the shortcuts arranged into groups by use so they are easy to find. http://www.freelaunchbar.com/

I experimented with the Quick Launch Toolbar then decided to create a toolbar referencing my Classic Shell All User program folder which is here:
C:\ProgramData\Microsoft\Windows\Start Menu\Programs
This produced a cascading menu of my programs tree which is better than nothing if Classic Shell fails.
How do you change the icon size in cascading Toolbar like this? Also, what folder does Classic Shell reference to find the Store Apps? I could setup a cascading Toolbar for that too.
