I was just thinking about how nice the Surface Studio is and looks, and it came to me...
You can't add any extra disks internally to it
There is a model that comes with am i7 and 32GB of RAM and 2TB of "Rapid Hybrid Drive", which nobody is quite sure what it is. The pictures look like an m.2 PCIe SSD. Of course it costs $4k, but it's a sleek unit.

You could always use USB storage to keep your VM's that you're not currently using, and swap them in to the main storage when you want them.

Like Barman said, in companies they'll likely use network drives, backed up to tape and kept off-site for disaster recovery.

Surface Studio is aimed first and foremost as an art device like Wacom Cintiq's, so Virtual Machines aren't much of a priority, however I expect Microsoft could find a way to fit two M.2 slots in there if there was a call for them to do so and Samsung are already pushing 2TB M.2 960 PRO's. Here's an Intel NUC Skull Canyon (which is also small) with two M.2 drives fitted on the left-hand side.

I have one of these, with 2 512GB Samsung 950's... it does scream. Also 32GB of DDR4

Nice. Pretty awesome little unit for it's size.
