Windows 10: Windows 10 Creators Update and Surface Studio Surface
There is a model that comes with am i7 and 32GB of RAM and 2TB of "Rapid Hybrid Drive", which nobody is quite sure what it is. The pictures look like an m.2 PCIe SSD. Of course it costs $4k, but it's a sleek unit.

You could always use USB storage to keep your VM's that you're not currently using, and swap them in to the main storage when you want them.
I have one of these, with 2 512GB Samsung 950's... it does scream. Also 32GB of DDR4
