Y'all worry too much!
You really shouldn't be using Windows. Really. You should stop it now. If you continue using it, you will quite soon be in a situation that no amount of therapy and medication can any longer help. What then? Rest of your life they would be following you but nobody would listen to you.
That being said, where on earth you find these "facts"? For instance, WiFi Sense has nothing to do with telemetry. It simply allows sharing of the WiFi between you and your friends / contacts. If you have it disabled your WiFi will not be shared. It's that simple.
"privacy issues," as in generalized mental issues...
Why would people object to anonymous data collection? Beats me. Anonymous, meaning, they don't know your name, your address, or anything else about you except what information you give them, voluntarily. People can really be silly--when they eat at a restaurant and hand over the CC to pay the bill they are giving the restaurant staff more info than Windows 10 will ever have. Then there are public phone books, public records of all kinds, driving records, police records, credit ratings, IRS and Social Security records, property deeds, etc.--that *do* identify people specifically. But for some really weird reason they are more worried about the kind of information collection that doesn't involve them by name. I guess it is the human penchant for irrationality coming to the fore...
Then again, some folks just like to complain...makes them feel worthwhile, I guess, the fantasy that other people want to know about them or would even find the details of their lives interesting. Data collection can be extremely beneficial--for instance maps, for starters, illustrating how to find locations. Weather reporting, etc. But the notion that this is "new" is not even remotely true. Specific and identifying data collection long predates the rise of computer networks; and the least invasive kind is the anonymous data collection of the kind this thread involves.
