Whew. Just read through the lot here! I was lucky. A trip to the dentist (that is NEVER lucky) but when I came back, 9879 was loaded and I just hit restart.
Two things that were mentioned in posts.
One Drive was certainly screwed around with. I ended up deleting my old OneDrive folder and letting the "new" OneDrive create a new folder. Copy any folder that you want to have in the OneDrive.
I donno what version my install.esd is. It has a creation date of Oct 9th (the date of 9860 version) but the readme.txt says 9879! It is 2.58GB in size. Is there any way to tell which version this file truly is?

Something is not right with the power options.
I left my PC to take a shower and when I came back all my 4 monitors are OFF. So, I went to Plan settings to change it to "Never" but it was already set to "Never" (both display and sleep settings). But how come my monitors still go off? Screensaver is also set to "None". Anyone here have the same issue?

If you want to you could also make an ISO file of that ESD (tutorial) which can then be burned to DVD or USB to be used as install media for Build 9879 clean install. From ISO file you can then find out the exact version information with one command like this:
1.) Mount the ISO as virtual DVD drive by right clicking it and selecting Mount, alternatively also double clicking the ISO will mount it:
2.) Check the drive letter your new virtual DVD drive got. Here in my case it is the J: drive:3.) Now give the following command in an elevated command prompt, replacing the drive letter (highlighted) with your actual drive letter for the virtual DVD drive:

Well I am not quite certain which part of Windows 10 resembles Windows 7 that you are referring to, but even with that said;

Yes I could change to Linux or OSX, or I can stay with Win7 or Windows 8.1 with my Start8, all of which are very good operating systems.
I am content with Windows 8.1 and my Start8 menu, I see no reason to change (at least not to Windows 10, it is my least favorite), IMHO Windows 10 is simply not very elegant, but I will keep your suggestion in mind.

Installed to a vhd and it's running well. Thankfully, the issue with the OneDrive screen at boot has disappeared.
This update has virtually killed off my use of onedrive
I don't want to download everything from my onedrive just so I can see it in file explorer, what happens when data stored on onedrive gets higher than the amount of local storage
Previous way was so much easier
