It suggests that the Windows installer for the updates failed to see that 360 was running and subsequently the reinstall of Norton saw the traces from the first install or the Defender automatically was turned on by the Windows installer in order to install that update and red flags went up by Norton right away.
It doesn't take much since in most cases two av programs or two malware removers simply won't work together. One has to go or be disabled and the update process woke Defender up. I have the distinct feeling this is what you saw happen there. What GFI apparently did in the last year or so was dump their updated and upgraded form of originally.
Sunbelt Firewall after they bought Sunbelt out and now are using a 3rd party source called ThreatTrack.net for the web filtering process used in the VIPRE firewall. That keeps both the Windows firewall as well as Defender off entirely even when Defender updates go on. With the 360 however it didn't stop the installer from tripping something.

Yup, think this event apply's to everybody , don't think it's a bug , think it's part of the way Windows 10 works .
Seems to only show what updates were successfully installed right after you installed them but then all info disappears .
Thank-you for confirming that I'm not imagining things, FredC. Let's hope that Windows10 doesn't start retiring items in the old "Control Panel", as some have said. Right now, that's the one place where I can see all update history.
Well that's what has been the case until i just checked a minute ago , now the updates installed is showing . On previous installs they never showed , this OS is baffling.
It suggests that the Windows installer for the updates failed to see that 360 was running and subsequently the reinstall of Norton saw the traces from the first install or the Defender automatically was turned on by the Windows installer in order to install that update and red flags went up by Norton right away.

Thanks for the explanation. Makes good sense! On to the next adventure...
For anyone who has had this recent W10 update KB3081455 continually failing to install, I found a fix on the MS Community Forum which has worked for me..............you need to run a Command Prompt (right-click on it to 'Run as Administrator'), type in "sfc /scannow" (without the quotes) and hit 'Enter'. It takes 30 to 40 mins or more to complete and it cleans and repairs various Windows files. Then re-run the update and it should install OK.
When the scan got to 100% the folowing message appeared....
Windows Resource Protection found corrupt files but was unable to fix some
of them. Details are included in the CBS.Log windir\Logs\CBS\CBS.log. For
example C:\Windows\Logs\CBS\CBS.log. Note that logging is currently not
supported in offline servicing scenarios
I think the reason the update had failed was possibly because I'd deleted Start Menu links to stuff that I'll never use such as Steps Recorder, Windows Journal and Sticky Notes, etc. as these links were back after running the scan.
It's unbelievable that a major Windows 10 update fails over something so simple!!

Here I first had things set to automatic but found that could get in the way when out of nowhere and right while I was in the middle of something "system restarting"?! Afterwards I went right back in and solved that with the "Notify to schedule restart" setting.
As for manual checks the last being 8:32am thursday morning followed by just checking again showing everything is upto date.
