You want to keep getting security patches for Windows 10? Investigate 0patch.com.
They have committed to 5 years of security patch support, thru 2030 or so.
I use the paid version, but they have a free version too.
I use 0patch on my Windows 7 systems too.
Seems good option.

seems like the best option
though Windows 10 IoT LTSC 2021 is 64bit only (there is no 32bit/x86 edition of this)
