Can anyone explain why when MSMST is being installed, the install meter keeps sitting on 0%? Each and every time! And when it's installed it goes away.
It isn't an actual update in the true sense but a malware scan that is updated and triggered by WU. I don't think WU has any way of tracking the scan's progress so jumps from 0% to 100% once it has finished.

I'm also getting confused with all the different update types or when 21H2 becomes available to the general public (not Insiders). Jumping from Win7, it was generally just hotfixes and service packs back then.
I received KB5007186 today via normal Windows Update but it did stay on 21H1.

Did you install the Insider 21H2 Enablement KB yourself (don't have to be an insider to do that)? If you're not an insider, that's the only way to be on 21H2 right now that I'm aware of if you're not an insider.

Yes, you get updated to "21H2" and I have no idea how or if it will differ from the official Windows 10 21H2 release version which hasn't happened yet.

No. Did you notice any changes/updates going from 21H1 to 21H2? You should be able to look in Windows Update History and see when you installed the 21H2 Enablement KB if you are curious.
