    Edge is crap!
I did this and worked but you have to keep developer tools open because when I close it the options reset to default

I have been waiting quite a while for WU to show Edge Chromium was available for download, but it never has.
My Edge browser was slow, and I just thought it was my old machine. I was hesitant to just go and grab a download thinking that MS would have offered it to me if they thought it was a good fit with my system, but yesterday I backed my system files up with Macrium, and gave it a go. I've got to say I am sorry i waited so long Edge Chromium is working great for me. Much faster. Granted I need to play with it for a while, but for now I'm impressed !

A 'Stable' Build Download has been available from MS for some months...select the one you want and for what platform, then download...about 80MB (Standalone or offline)
    https://www.microsoft.com/en-us/edge/business/download

You can also Uninstall the OLD Edge, via Start, Apps.
Then Delete any Edge Directories in Prog Data, Prog Files, etc, also can go into
C:\Users\*****\AppData\Local\Packages and Delete and Directory/Folder with OLD Edge.
    Also..
    C:\Users\*****\AppData\LocalLow\Microsoft
And check (cant remember for old edge in)
    C:\Users\*****\AppData\Roaming\Microsoft
ALL these should be empty inside folder.
Now you can install the MS Edge Chrome Standalone Installer from link above and YES it will auto update to new released, just like Google.

I also do not see that MS are including old edge or installing the old edge in any WU or Feature Updates after just doing one for 19041.207 build.
I would think IF you already have the new Edge Chrome build up and running BEFORE any WU or Feature Update then it will not install the old edge....?

Online or standalone builds also here in forum.

Installing Edge Stable removes Edge Legacy.
