I have the new Sticky Notes 3.7.68 version and in the Windows 10 Insider Fast ring, but don't have this hide/show feature yet.

Sticky Notes is rolling out a new feature to Insiders Fast! In 3.7.68, we have added back a quick way to show or hide all opened notes, via the jump list! 🙌 Right click on the icon in the task bar to bring up this menu. You asked and we listened, thanks for the great feedback.
