I think the solution is in the referenced link given earlier:

We are working on a resolution and estimate a solution will be available in late August.

To mitigate this issue before the resolution is available, you will need to update the Intel® RST drivers for your device to version 15.5.2.1054 or a later. Check with your device manufacturer (OEM) to see if an updated driver is available and install it. You can also download the latest Intel® RST drivers directly from Intel at Intel® Rapid Storage Technology (Intel® RST) User Interface and Driver. Once your drivers are updated, you can restart the installation process for the May 2019 Update.

Updating the last two instances of Windows 10. They are VM on nesed ESXi Hypervisor(one 6.5, which I will later be able to run from a Windows VM) and 6.7 (which cannot use the Windows client program - I'd have to buy vSphere which I am not going to do). Both reset to the Slow ring but I got one momentarily on the Fast Ring and its updating using WU but the other I could not reset and its updating (faster) using the ISO from UUPDUMP. It makes no sense that these machines are reset to the Slow Ring - according to Microsoft I could not update them without a clean install in the Slow ring. Does anyone know why this reset is happening. Perhaps I should check the Feedback Hub.

There is no solution, Linkpa, except for what f14Tomcat told you. Unless you want to wait until late August (we're almost there) for a solution.

Simrick uninstalled IRST, then installing the newer version of IRST. That worked for her and she could update her client's computer.

Hmmm, maybe they were updating Feedback Hub when I tried to get in the other day.
