This time when Skip Ahead was offered, I signed up and haven't changed anything since, so it seems I'm still "officially" on Skip Ahead, while I "guess" I'm on the Fast Ring.

Just call me Ms. Confusion . . .

It makes sense, Skippy would have a rest probably until 20H1 is released then woken up for 21H1.

Most likely, yes.

I thought that was the modus operandi moving forward for Skip Ahead program - every time they open it now you have to re-register.
