Just copy what you have to your user folders libraries, and you'll at least have that.

It seems OneDrive also got updated on 02 Oct according to the Release Notes.
I wonder if this has something to do with some of the missing data.
I'm still on 1803 (with updates paused) and my OneDrive version is 18.151.0729.12.

I really feel for those folks that lost their data with the 1809 update. I don't use Cloud or One drive services, I like to control my own data, not MS. With regular imaging of my data, I've managed all these years just fine without Cloud or One Drive.
With enormous external drives available for very little money, there seems no reason not to be in charge of your own data. People often say "Cloud is just another word for your data on someone else's computer/storage", which is true enough. I think of the cloud as being "who knows where the heck your data is?". I spent years in the early part of the 'microcomputer revolution' to get my data OFF of network storage, to move it to my local control. And now people seem all too happy to give it away again. For convenience, I suppose, and to facilitate various mobile devices. Good luck with that...
