Something off, indeed....
I reverted my Release Preview Build back to 1803 yesterday morning (Sunday, 11am). Got it all cleaned up and semi-spiffy. Before a backup, I checked to see if any Defender Definitions were ready. Mistake......
1809 starting downloading! Granted, they (MS) said it was pulled, but still there and tagged to Release Preview as Feature Update. I just let it go. I've got backups all over the place.
But, I have taken the preemptive move of doing this on my main box. I'll make the call when it comes down this time.

Still no problems with the 3 pc's I updated to 1809. Nothing missing and everything works. All 3 have AMD processors. Did not try to update the one with Intel CPU.
I went back to 1803 via Macrium image backup 20 minutes after I installed 1809 in the first hours after release. First time I've ever done that. Usually when I get a feature update there is a cute bug here and there, but this one had multiple things going on (slow, screen brightness issues, a color change and other things) and it gave me a bad feeling. So I went back to 1803 on my main laptop and a little netbook. I had taken an image right before the update so I was back up and running on 1803 within 10 minutes or so. I'm going to block the update for now and wait a few months before considering moving to 1809.
I updated a friend's laptop to 1809 at the same time and aside from an annoying color change which he doesn't mind, I'm not seeing any major issues on his laptop. I offered to put him back to 1803 since I had also imaged his before, but he is going to stay on 1809 for now. He's not sure if he lost anything. I had showed him to keep his files in self created folders so I don't think he would be affected by the deletion issue. Seems like he has everything. And he has it in the 1803 image in any case. We've agreed to wait from now on for a least a couple of months if not longer before doing feature updates in the future.
Are most of the issues with laptops or also with desktops? I haven't really paid attention to the computer specs of those that have issues.
