A lot of the children of the Packages folder seem to have errors. What's annoying is using 'TakeOwnershipEx' I can see children folders and their contents!!! @MaloK
Try to Rename "Microsoft.MinecraftEducationEdition_8wekyb3d8bbwe" to "Minecraft", if you succeed CUT that directory and paste it it in the root of the same drive (make sure there's no other Minecraft directory there).
go to that directory and redo

Supposed to be 10 days. Yes trying a bootable solution at this point is more than a good idea... There's something damaged on your files system takeown normally works good.
I didn't read where you tried this: Instead of trying to open the file(s) still in the Windows.old have you tried to simply copy it first to your desktop, and then try to access it?
I did try it but I believe I didn't post that information. This is what happened on the attempt to do that @Bobby Phoenix

Thank you to the following users for help: @MaloK, @Berton; and @Ghot;. I'm currently in Linux Mint typing this message. @MaloK, since I've cut + paste the Minecraft education edition folder to the root of the drive, I can't put it back and I'm getting this error in Linux Mint:

This is normal, every symbolic links present into those directories where broken when Windows installer moved them to Windows.old
