From my experience, I suspect that's actually normal behaviour.
When I went temporarily to logging into Windows with a Microsoft account, I seem to remember that using a PIN was the only option that seemed to be viable, and was certainly the option that MS wanted me to use!
My machine doesn't support any of the fancier options like fingerprints.
Is the PIN still working when you're using a Microsoft account on Windows?

It is and it's a viable workaround as it does not recheck my Microsoft account, i.e. it should work offline as well.
I am just wondering why this has only happened after the in-place upgrade.
Before that I had used my password to log in for months and it never did that Microsoft Account-popup and verification thing.

UPDATE: For reasons unknown (possibly the global logout via the web frontend) my login via password is now functioning as expected and it's possible to remove the PIN.
Frankly, I don't know why that is as the last thing I did (after the Microsoft account to local account and back again) was clicking the global logout button.
This seems to have had little effect, as my Windows is still showing the Microsoft account and presumes it is still logged in.
But the missing options have magically come back and signing in with a password is no longer opening the Microsoft Account app...

I hope that it stays this way and presume that the issue is closed.

Thank you very much for your time and effort!

    Great news!
I guess something had got corrupted somewhere in the upgrade and needed to be completely reset from scratch to sort it out.
Glad if I've been able to help!
    Cheers, Dave.
