Have you tried the following after removing Windows 10 Update Assistant?
Enable or Disable Windows Update Automatic Updates in Windows 10 - Page 48 - Windows 10 Tutorials

This thread now runs to more than 50 pages. I've been following it almost from the beginning, but now feel totally lost. Does Brink's tutorial and the instructions at the beginning of this thread still apply, or has Windows 10, through its numerous updates, been inured to this process so that it no longer functions as initially intended? Could we have a formal update, and perhaps a new starting point (or even a "new and improved" discussion) on how to 'personalize' the Windows Update process? AND... if it could apply to Windows Defender updates, that would be a big help. There seems no way to control those.
Hello Jim, :)
Yes, the options in the tutorial still work. However, they may sometimes get reset back to default. Especially after a new update.
I find Option Four the most effective without completely disabling Windows Update.
Many thanks for the 'confidence factor.' A script to 'do' and 'undo' Option 5 would be very welcome too.
Jim,
You could use the commands below in an elevated command prompt, or in a .bat file using "Run as administrator".
Do note, that many have found this service gets automatically enabled again after a restart.
(enable)
sc config "wuauserv" start=demand
(disable)
sc config "wuauserv" start=disabled
Great, thanks!
