You could still do that if you like to help make sure, but usually disabling automatic updates will be enough to be able to hide what you don't want before installing the other available updates.

I've used the BrinkFix® scripts successfully to block automatic maintenance and automatic updates on both an older Win10/1607 machine and on a more recent Win10/1703 (Creator's) one. However, on the 1703 computer, the scripts do not prevent automatic updates to the Windows Defender Security Suite. That machine is out in a lab and not always on, but if left on overnight it will show the most recent Defender updates next time I look. I can shut off the Wi-Fi, but unless I'm missing something there doesn't seem to be a way to prevent these specific updates. Security updates aren't really a concern, but the fact that they happen, unbidden, makes me nervous. Any way to keep our friends in Redmond at bay?

Setting the network connection to be metered may be able to stop them from automatically downloading and installing.
