Adding some more detail to my above post from yesterday to maybe clarify this a little bit.

Put simply, an enhanced session seems to only work with the FIRST admin level account created. If I create another admin level account in the VM and logon with with it, selecting "Enhanced Session" in Hyper-V will log you off and log you onto the first admin account.

Does anybody know how I can make Hyper-V vms to automatically jump to enhanced mode if present. I always have to manually select enhanced mode after logging in as basic mode, and then re-sign in.

For the Hyper-V Server (not the individual VM) select "Hyper-V Settings". Select "Enhanced Session Mode" and then check "Use enhanced session mode". Now, when you connect to the VM you should see a dialog allowing you to select a resolution to use for the connection. If you click on the "Connect" button you will connect with Enhanced session mode. If you close that dialog you will connect without enhanced session mode.

For all my Hyper-V experience, I never knew this setting was there LOL. Consider an old dog has learnt a new trick!

No worries! There are so many settings scattered all over the place, that I just can't keep track of them either.
