So I tried Macrium and AOMEI. This might come as a bit of a shock but Macrium has the very same issue as Windows disk imager.

Post #16 in the above linked thread has a fix applied to Macrium Reflect (fix as suggested by Macrium support) and currently this seems to have resolved this specific issue.

can i create the System Image on a USB Thumb Drive? I have an external Free Agent drive but it already has backup files and a System Image stored from my main computer. Unless it is okay to have them both on that drive. It is not like they are bootable and I have plenty of space.

Just mentioning this for information re Windows Disk Imaging.
I've complained in the past that Windows did not back up and restore the Windows Update history list. This meant that once you restored an image the history field was empty and the message displayed was 'no updates have been installed yet'. Of course they had and they were, it was just the list that was not restored.
Although I have now switched to Macrium, my clean Anniversary Update did get treated to a couple of Windows backup and restores during being built up, and of course the history field was blank.
Today saw me install the latest cumulative update and guess what :) The history list has somehow been restored. I don't know how, but it has. The two updates installed on 3rd August are now back in the list.
Odd, and I've no idea how its done it, but it has.
