Luckily, you could still do a clean install for now from installation media if needed.

I have tested with RTM build (10240) ISO and "Reset" option is exist. But with Build 14393 and 15063 ISO no luck. Unforunately it seems they remove "Reset/Refresh" option both installation media and recovery Drive

Hopefully it will be added back soon. Being able to "Refresh" at boot can be very helpful if you are unable to boot into Windows, and don't want to "Reset" or "Clean install".

Hopefully. As you say "Reset" is not so important but "Refresh" is very usefull.

If you choose reset to factory settings, wouldn't sync then restore them again?

I worked so hard for two days trying to reinstall drivers etc. I was so frustrated. I just kept rinning into problems. I searched the forums for hours. What I am trying to say is even after reset my computers was running badly still. All my HP support apps were gone so I installed the HP assistant. I ran the trouble shooter restarted and my computer is totally fixed and working well. I hope this helps someone else. Believe me In fairly new at this. I hope I am not stepping on anyone's toes leaving a post like this. Thank you. Happy day! I have a HP Pavilion Notebook Touch 17" screen. Just downloading HP assist fixed it all. I was kind of surprised my warranty just ran out. Thanks for letting me post!. I love you HP assist.

"Reset this PC" not formatting drive

I though that option "Remove files and clean the drive" (Reset this PC -> Remove everything -> Remove files and clean the drive) which can take several hours (they say) is equivalent for full format and reinstall windows from scratch, but it isn't! For example WindowsApps folder was not restored to original state at all and other things too...
So which option is like classic oldschool format from boot media?

Did you by chance create a recovery image at some time before doing the reset?

If so, it would have been used to reset your Windows with instead, and could explain why it was reset back to default like a clean install.

You can use the tutorial below to check to see if you may have created a recovery image.

If Recovery image location is blank, you didn't.
If Recovery image location has a path, you did.

The Windows 10 Reset feature, accessible through the items "Troubleshooting", "Reset this PC", "Remove everything", "Fully clean the drive" and "Reset" also removes all previous Windows Update and Microsoft Store updates and restores the current build to its original state. Right?

Windows Reset would be like doing a clean install of the current build of Windows 10. Everything will be wiped and default afterwards.
