Since you sold the PC, you could do a clean install instead with a Windows 10 installation USB to wipe everything and reinstall Windows 10.

Hello, after windows 10 reset and delete all files, I got a message saying that not all personal files were deleted, and that I could try to reset it again, which I don't want.
So do you know how to find the files that were not deleted before giving the computer to a new person ?

You might see if there are any traces left in the "C:\Users\(user-name)" folder for the account, and if there is a "C:\Windows.old" folder that may contain files from the previous installation.

Then it seems ok, all the programs have been deleted and windows 10 is really great to reset and install itself again !

You can safely delete the Windows.old folder if you didn't want anything in it. Option 4 in the tutorial below is the easiest way.

If you start PC from recovery drive or installation media (USB or DVD) "Reset" option don't appear anymore. I tried (As host and as media source) Windows 10 build 14393 and Creator Update (15063) but no luck. When click "Troubleshoot" option this screen doesn't appear

But if Recovery Environment appears automatically (Without booting any media) reset is fine.

The "Recover from a drive" option should only be there if booted from a recovery drive that was created with the "Back up system files to the recovery drive" box checked.

I think I couldn't explain myself. In video you see I use installation media not recovery drive.
Also I don't talking about "Recover from a drive" (It's may bad. I wrote my comment below wrong tutorial. I wanted to comment this tuttorial: Reset Windows 10 )

Before when I boot my PC from installation media or recovery drive "Reset" option was there and I could reset Windows 10. But now here OPTİON ONE, Step 2 doesn't appear anymore?
Hmm, I'm not seeing it either in a build 15063 VM when booting from installation media. I'll have to do some more testing.
The "Reset this PC" option is still there if booting to advanced startup from within Windows 10 though.
Luckily, you could still do a clean install for now from installation media if needed.
This will be a real shame if that option has been removed from installation media.
