Consider adding roll or rollback somewhere in the tutorial to create more frequent hits.
The screenshots for Option One (go back in Advanced Startup) need updating.
In 1909 and 2004 there is now an Uninstall Updates option in Troubleshoot > Advanced Options, which when selected gives two options: Uninstall the latest quality update, and Uninstall the latest feature update. This last one goes back to your previous build of Windows, as before.

Yes, that's the one. 'Uninstall the latest feature update' seems to be the new name for 'Go back to the previous build. I've just used it, it does the same job of restoring from Windows.old and still used the same 'Restoring your previous version of Windows...' screenshot you show after:1010 The previous build of Windows will now start restoring. (see screenshot below)
An additional method to rollback is to use command line:
DISM /Online /Initiate-OSUninstall [/NoRestart|/Quiet]
Code:By default, you will be prompted to restart the PC after running this command. You can choose to suppress the prompt by either specifying the /Quiet option, which allows the restart the happen automatically, or specifying the /NoRestart option, which will require the PC to be restarted manually. Note: The /NoRestart and /Quiet options are new in Windows 10 Version 2004. In earlier versions of Windows 10, successful execution of this command does not produce any output, and the PC must be restarted manually. Running the command again after it has already succeeded will result in ERROR_NOT_FOUND (1168), but the uninstall will continue to proceed once the PC restarts.
