    EDIT: I think I just solved it--sort of. OneDrive creates its own Documents folder, which will sync online--no matter what. The OneDrive Documents folder doesn't allow you to save files locally unless they're synced online with OneDrive. If you select to unsync it, it deletes the file online and offline.
    Ah, that would be why then.

    It would have been to uncheck the folder at step 6 in the tutorial on the first page, but that would stop syncing it.

    I actually moved the location of my Documents folder to be in the OneDrive folder for convenience, but I guess I'll just move it back to my user profile folder and have two copies of the folder. Or I could reactivate my copy of Goodsync, which has WAY more flexibility than the OneDrive app.

    Either way would be a good alternative to keep it separate and on the PC.

    Does OneDrive only backup files in the OneDrive folder? What's going to happen when I change the location of Documents from X:\OneDrive\Documents to %USERPROFILE%\Documents?

    If you wanted it to sync with OneDrive online, you would need to make sure to select that folder in step 6 in the tutorial in the first post here.

    To backup to OneDrive, you could use the method below to select the Documents folder instead.

    Turn On or Off OneDrive PC Folder Backup Protection in Windows 10

    You may have to test one option first to see how it works for you before trying the other option above.

    I'm just not going to touch the backup option. It shows some conflict because I have my tax documents in OneDrive and My Documents folder, but I'll just leave the error because I think when I tell it to backup anyway, it will move my documents folder back to OneDrive.

    Technically, both options should only keep a copy of Documents folder contents synced on OneDrive.

    Eh, I'll live. To me, this is a win! I thank you for your help. It's just a reminder to keep your local documents in your user folder and keep files that are important in your OneDrive documents folder.
