No real difference in the telemetry, just Media functions are removed in the N versions - no Windows Media Player, for example. If you regard that as 'junk', in the normal versions it is optional and can be removed in 'Turn Windows features on or off'.

I heard skype auto installs itself after you delete it. I haven't done anything else but its now activated. I was in the middle of preparing a new customised win 10 pro ISO.

Good question, but 7 to 10 worked for me less than a month ago.
