I finally managed to delete it by booting directly to a Command Prompt in the Advanced boot settings. Everything else I tried didn't work.

Finally I booted to live ubuntu and from there I deleted Windows.old folder.
Can I keep windows 10 from deleting it after a month or something like that? Or move it to an other location and direct it to that path?

Not that I'm aware of.
It would be best to create an image backup of the previous Windows before upgrading to restore it with.
The Go back to previous Windows feature is just for a temporary backup in case there was a problem with the upgrade, or one didn't care for Windows 10.
I upgraded an old notebook from Windows 7 to Windows 10 and found this Windows.old folder with 30.2 GB of disk space!
Take ownership of it and then run Disk Cleanup as an Admin. That worked for me.
