Could someone explain what exactly intel rapid storage technology and intel management engine does? I have tried looking on intels website for information, and to be honest I dont understand what they do.

You don't need any Intel drivers except the display.
RST you don't need - it is a disk device driver (MS included one is better usually)
IME runs on a second processor and allows remote access even when your PC is shutdown. You can remove the driver (the interface to this) but you can't get rid of the security issue at all unless you get a PC built before about 2010.

Simply having it installed without using any of the options to configure performance/storage will most likely not buy you much. Take a few minutes to go thru the options and see if any of them can be used to your benefit. Not all options apply to all systems, depends on your config. You've got a decent CPU and a fast SSD, so major noticeable leaps in performance can't really be expected. You need to tinker with it a bit, and do some research.

Then you don't need their display driver either. I don't have a separate GPU so I have to use the built in Intel one.
Intel (via Windows Update) have a habit of installing stuff you don't need.
FWIW I also disable these services (under services.msc) which seem to add no value either.

Alright, so i spent some time testing it. The only option i found was to activate and deactivate something called link power management, which is a power saving feature. I dont see anything else I can change. I also dont seem to have the same options as you. Most of my SSD settings are optimized by wisecleaner anyway.

There is no point playing with SSD optimization. The firmware (or Windows) will do it for you.
Was that Hollandic by the way?
